This article discusses demand controlled ventilation for commercial kitchens. This technology is poised to become standard practice in commercial kitchen design because it minimizes the need to condition large amounts of makeup air. Whatâs changing is that Standard 90.1-2010 and the ASHRAE Handbook both recognize DCV as a key attribute of energy-efficient commercial kitchens. Also, the technology is now offered by at least eight manufacturers.
